Tuna and Potato Salad
Most ingredients are available in Antonio’s Market!
1 can Tuna in Oil, Drained and Crumbled
3 tbsp Extra Virgin Olive Oil
1/2 lb Mozzarella Cheese, Chopped into Small Pieces
1 1/2 lbs Red Potatoes, Cut into Bite-Sized Pieces
8 ea Scallions, White Part Only
2 ea Tomatoes, Diced
3 tbsp Parsley, Chopped
Salt and Freshly Ground Black Pepper, To Taste
Method of Preparation
1. Boil the potatoes and cool in a large bowl.
2. Add the scallions, tomatoes, mozzarella, tuna and parsley to the cooled potatoes.
3. Add the olive oil, salt and pepper to taste.
4. Mix thoroughly.
5. Let rest for 30 minutes before serving.
