Tomato, Basil and Mozzarella Penne
Most ingredients are available in Antonio’s Market!
1 lb Penne Pasta, Cooked
1/4 cup Extra Virgin Olive Oil
4 ea Garlic Cloves, Crushed
1 lb Cherry Tomatoes, Cut in Half
10 ea Basil Leaves, Chiffonade
1/2 lb Bocconcini (Bite-Sized Mozzarella Balls)
Crushed Red Pepper Flakes, To Taste
Salt and Pepper, To Taste
Method of Preparation
1. Mix tomatoes, oil, salt, crushed red pepper and garlic in a large bowl. Let marinate at room temperature for 30 minutes.
2. Remove garlic from tomatoes.
3. Add basil and hot pasta, toss well.
4. Adjust seasoning and fold in cheese.
