Description
To start with, Guanciale is a cured pork jowl. Its just like bacon, but it is another part of the pig that is cured. Guanciale is available in our downstairs market. If you can’t find scallops, shrimp is a perfectly good substitute.
Ingredients
- 1 Tablespoon Blended Oil
- ¼ Cup Diced Guanciale
- 1 Cup Bay Scallops
- 1 Shallot, Minced
- 2-3 Garlic Cloves, Minced
- ½ Pound Spaghetti, Cooked
- To Taste Red Pepper Flakes
- 2 Tablespoons Flat Leaf Parsley, Chopped
- To Taste E.V.O.O.
Method of Preparation
- In a large sauté pan over high heat add the oil and guanciale
- Cook until rendered and crispy
- Add garlic and shallots
- Season the scallops with salt and pepper and add to the pan
- Cook until slightly golden
- Put cooked spaghetti into sauté pan. Toss to evenly distribute the ingredients
- Add red pepper flake, butter, salt and pepper
- Let reduce to sauce consistency
