Orange-Scented Easter Ricotta Cake

1 ea Prepared Pastry Dough
2 tbsp Grated Orange Zest

For the Filling-

1 1/2 lbs Ricotta Cheese
4 ea eggs
1 cup Sugar
1/4 cup Flour
2 tbsp Grated Orange Zest
1 tbsp Vanilla Extract
1/3 tsp Salt

Whipped Cream (Optional)

Method of Preparation

1. Preheat the oven to 350 degrees F.
2. Place the pastry crust into the shell of a 9 or 10 inch tart pan with a removable bottom.
3. Press the grated orange zest into the pastry dough.
4. Refrigerate until needed.
5. For the filling- in a large bowl, combine the ricotta, orange zest, flour, vanilla and salt.
6. Blend thoroughly and set aside.
7. Beat the eggs slowly until foamy.
8. Add the sugar and beat until thick.
9. Stir into the ricotta mixture and blend until smooth.
10. Pour into the pastry.
11. Bake for 50 to 60 minutes, until the filling is firm and the pastry is golden.
12. Cool for 30 minutes.
13. Remove from the pan.
14. Serve with a dollop of whipped cream.
