Mixed Field Greens with Walnuts and Cranberries
Most ingredients are available in Antonio’s Market!
1 bag Mixed Greens
1 cup Celery, Diced
1 cup Parmesan, Shaved
1/2 cup Dried Red Cranberries
1/2 cup Walnuts, Chopped
For the Dressing
1 tbsp Dijon Mustard
2 tbsp Red Wine Vinegar
1/2 cup Extra Virgin Olive Oil
1 ea Garlic Clove, Minced
2 tsp Parsley, Minced
Salt and Freshly Ground Black Pepper
Method of Preparation
1. In a large serving bowl, combine salad ingredients.
2. In a small bowl, whisk together dressing ingredients.
3. Toss the salad with the dressing.
4. Add salt and pepper to taste.
5. Serve immediately.
