Ingredients

• 1 1/2 cups Butter, Unsalted
• 1/4 tsp Salt
• 4 1/2 tsp Vanilla Extract
• 1 1/2 tsp Almonds, Finely Ground
• 3 cups All-Purpose Flour, Sifted
• 3/4 cup Confectioners’ Sugar
• 1/3 cup Confectioners’ Sugar, For Rolling

Method of Preparation

1. Preheat oven to 325 degrees F.
2. In a large bowl, cream the butter.
3. Gradually add the confectioners’ sugar and salt.
4. Beat until light and fluffy.
5. Add almonds and vanilla.
6. Gradually mix in the flour.
7. Using about 1 tsp for each cookie, shape into balls.
8. Bake for 15-17 minutes on an ungreased cookie sheet.
9. Cool slightly, then roll in the extra confectioners’ sugar.
