Chickpea Salad with Herb Dressing and Goat Cheese

For the Salad:

1 can (15oz) Chickpeas, Drained and Rinsed
1 cup Corn (fresh or frozen)
1 cup Green Peas (fresh or frozen)
2 ea Roma Tomatoes, Diced
2 ea Celery Stalks, Diced
1 cup Crumbled Goat Cheese

For the Dressing:

1 tsp Lemon Juice
1 tbsp Red Wine Vinegar
3 tbsp Extra Virgin Olive Oil
4 tbsp Thyme, Chopped
4 tbsp Parsley, Chopped
Salt and Freshly Ground Black Pepper, To Taste

Method of Preparation

1. Combine all of the salad ingredients in a serving bowl.
2. Whisk together all of the dressing ingredients.
3. Toss everything together
