Braised Greens with Olives and Sun-Dried Tomatoes
Most ingredients are available in Antonio’s Market!
1/4 cup Sun-Dried Tomatoes with Oil
1/4 cup Black Olives, Pitted
1/4 cup Pine Nuts, Toasted
1/4 cup Pancetta, Diced
2 tbsp Extra Virgin Olive Oil
2 ea Garlic Cloves, Minced
1 pinch Dried Chile Flakes
2lb Fresh Greens (Turnip, Spinach or Mustard work well), Chopped
Salt and Pepper, To Taste
Balsamic Vinegar, To Drizzle
Method of Preparation
1. In a large skillet, combine olive oil, pancetta, garlic and chile flakes.
2. Cook on medium for 5 minutes.
3. Add the olives, tomatoes, pine nuts and greens.
4. Toss to mix well.
5. Add salt and cover.
6. Cook for 20-30 minutes.
7. Remove from heat and serve with a drizzle of balsamic vinegar.
