Antonio’s Limoncello Cake

All Ingredients are available in the Market.


  • Cooking Spray
  • 1 cup plain yogurt
  • 2 eggs
  • 1/3 cup blended oil
  • 2 tablespoons lemon juice
  • 2 tablespoons lemon zest
  • 1 cup sugar
  • 1/4 cup Limoncello
  • 2 cups A.P. flour
  • 1 & 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • pinch of kosher salt
  • 3/4 cups confectioners’ sugar
  • 3 tablespoons Limoncello

Method of Preparation

  1. Preheat oven to 350
  2. Spray and 8 inch cake pan with cooking spray
  3. Whisk together yogurt, eggs, oil, lemon juice & zest, sugar and 1/4 cup of Limoncello in a mixing bowl
  4. Combine in a separate bowl the flour, baking soda, powder and salt
  5. Pour the dry ingredients into the wet ingredients
  6. Mix only until ingredients are blended do not over mix or the cake will be come tough
  7. Pour the batter into the cake pan coated with spray
  8. Bake the cake in oven for about 30 minutes or until the cake is golden brown and a toothpick into the cakes comes out clean
  9. Stir the powdered sugar and the 3 tablespoons of Limoncello together in a bowl until smooth
  10. While the cake is still warm poke holes into the cake with a fork or skewer and spoon the glaze the glaze over the cake and smooth it with the back of the spoon
  11. Serve warm if possible
