Cooking With Dave: How to make Zucchini Glazed Pasta


  • 5 large zucchini
  • 2 minced garlic cloves
  • 1 lb spaghetti
  • Antonio’s unfiltered olive oil
  • Parmesan cheese
  • Sea Salt 1 tablespoon
  • Cheese cloth

Method of Preparation

  1. Cut the zucchini into halves
  2. Shave all of the dark green skin into a mixing bowl lined with cheese cloth and the minced garlic and 1 tablespoon of salt
  3. Once all the skin is removed and into the cheese cloth with the garlic and salt, place in refrigerator for 2 hours
  4. Remove from refrigerator and press all the liquid from the cheese cloth into a container…approximately 1 cup of sauce
  5. Bring a pot of water to boil your pasta cook to almost al dente
  6. Drain pasta and put aside
  7. Add 3/4 cup of the zucchini liquid to the pot until simmering
  8. Add pasta back to pot and saute while stirring until all sauce is absorbed
  9. Add the zucchini pesto to the pasta in the pan and mix together

Serve with Parmesan to taste
