Cooking With Dave: How to make Zucchini Glazed Pasta
Ingredients
- 5 large zucchini
- 2 minced garlic cloves
- 1 lb spaghetti
- Antonio’s unfiltered olive oil
- Parmesan cheese
- Sea Salt 1 tablespoon
- Cheese cloth
Method of Preparation
- Cut the zucchini into halves
- Shave all of the dark green skin into a mixing bowl lined with cheese cloth and the minced garlic and 1 tablespoon of salt
- Once all the skin is removed and into the cheese cloth with the garlic and salt, place in refrigerator for 2 hours
- Remove from refrigerator and press all the liquid from the cheese cloth into a container…approximately 1 cup of sauce
- Bring a pot of water to boil your pasta cook to almost al dente
- Drain pasta and put aside
- Add 3/4 cup of the zucchini liquid to the pot until simmering
- Add pasta back to pot and saute while stirring until all sauce is absorbed
- Add the zucchini pesto to the pasta in the pan and mix together
Serve with Parmesan to taste
