Sweet and Sour Pasta Salad

2 cups Pasta, Wheels or Rotelle
1/4 cup Olive Oil
1/4 cup Mayonnaise
1/4 cup Sour Cream
1 tbsp White Wine Vinegar
1/4 cup Olive Oil
1 tsp Sugar
1 stalk Celery, Finely Chopped
1/4 cup Bell Pepper, Finely Chopped
1/2 ea Sweet Onion, Finely Chopped
1 ea Carrot, Diced
2 tbsp Parsley, Finely Chopped, Plus extra for Garnish
Freshly Ground Black Pepper

Method of Preparation

1. In a medium pot, cook the pasta for 5 minutes or until al dente.
2. Drain well.
3. Transfer the pasta to a large bowl and add the pepper, celery, onion, carrot, and parsley.
4. Set aside.
5. In a medium bowl, combine the olive oil, sugar, mayonnaise, vinegar, sour cream, salt and pepper.
6. With a wire whisk, beat hard until very creamy.
7. Pour over the pasta and mix well.
8. Adjust seasoning to taste.
9. Cover the pasta salad and refrigerate for a few hours.
10. Remove the salad from the refrigerator about 30 minutes before serving.
11. Sprinkle with some extra parsley before serving.
