To start with, Guanciale is a cured pork jowl. Its just like bacon, but it is another part of the pig that is cured. Guanciale is available in our downstairs market. If you can’t find scallops, shrimp is a perfectly good substitute.

  • ¼ Cup Diced Guanciale
  • 1 Cup Bay Scallops
  • 1 Shallot, Minced
  • 2-3 Garlic Cloves, Minced
  • ½ Pound Spaghetti, Cooked

  • 2 Tablespoons Flat Leaf Parsley, Chopped
  • To Taste E.V.O.O.

  1. In a large sauté pan over high heat add the oil and guanciale
  2. Cook until rendered and crispy
  3. Add garlic and shallots
  4. Season the scallops with salt and pepper and add to the pan
  5. Cook until slightly golden
  6. Put cooked spaghetti into sauté pan. Toss to evenly distribute the ingredients
