Most ingredients are available in Antonio’s Market!


1/2 lb Penne Pasta
1 ea Zucchini, Diced
1/2 cup Green Olives, Pitted
1 cup Greek Olives, Pitted
3 ea Roma Tomatoes, Diced
1 cup Marinated Artichoke Hearts, Drained
1 can (15oz) Garbanzo Beans, Drained
1/2 cup Parsley, Chopped
1/2 cup Feta, Crumbled
Fresh Lemon Juice

For the Dressing:

1/4 cup Olive Oil
Juice of 1 Lemon
1/4 cup Pine Nuts
1 ea Garlic Clove, Minced
Pinch of Salt and Pepper

Method of Preparation

1. Cook pasta according to package instructions.
2. While pasta is cooking, combine all of the dressing ingredients in a small saucepan.
3. Cook over medium heat for 5 minutes.
4. Set aside.
5. When pasta is tender, toss with the dressing.
6. Add the tomatoes, olives, artichokes, zucchini, beans, parsley and feta.
7. Toss well and top with a squeeze of fresh lemon juice per serving.
