Mushroom Meatloaf

Ingredients

• 2 lb Ground Beef
• 1/2 lb Mushrooms, Trimmed and Cleaned
• 2 tbsp Extra Virgin Olive Oil
• 1 tbsp Garlic, Minced
• 1 ea Large Yellow Onion, Diced
• 3 ea Eggs
• 1/2 tsp Thyme
• 1/2 tsp Oregano
• 1/4 cup Worcestershire Sauce
• 1 cup Panko Breadcrumbs
• 1/2 cup Heavy Cream
• 1 tbsp Salt
• 1 tsp Pepper
• 1/2 cup Spicy Mustard
• 1/4 cup Maple Syrup

Method of Preparation

1. In a large sauté pan, heat olive oil over medium-high heat.
2. Add mushrooms and sauté for 5 minutes.
3. Add garlic, thyme, oregano and Worcestershire sauce. Cook for 2 minutes.
4. Remove pan from heat and refrigerate mixture until cool to the touch.
5. Preheat oven to 350 degrees F.
6. Grease a roasting pan with cooking spray.
7. Place beef in a large bowl.
8. Add eggs, breadcrumbs and mushroom mixture.
9. Mix thoroughly, kneading as little as possible.
10. Mix in cream and season with salt and pepper.
11. Form loaf into a long tube shape in roasting pan.
12. Bake until internal temperate is 130 degrees F, about 40 minutes.
13. Whisk mustard and maple syrup together.
14. Glaze meatloaf and continue baking until internal temperature reaches 150 degrees F, about 15 minutes.
15. Remove loaf from the oven and loosely cover with aluminum foil.
16. Let rest for 10 minutes.
17. Serve sliced with juices spooned over top.
18. This meatloaf goes great with creamy mashed potatoes!
