Lentil Soup

2 tbsp Extra Virgin Olive Oil
1/2 cup Onion, Finely Chopped
1/2 cup Celery, Finely Chopped
1/2 cup Carrot, Finely Chopped
2 ea Garlic Cloves, Minced
5 1/2 cups Water
1 1/2 cups Dried Lentils
1/4 cup plus 2 tbsp Dill, Chopped
2 ea Bay Leaves
1 tsp Crushed Red Pepper
8 oz Tomato Sauce, No-Salt-Added
1 tbsp Balsamic Vinegar
3/4 cup Feta Cheese
Salt and Freshly Ground Black Pepper, To Taste

Method of Preparation

1. In a deep pan, heat the oil over medium heat.
2. Add the onion, carrot, celery and garlic and sauté for 10 minutes.
3. Add water, lentils, 1 tbsp Dill, bay leaves, red pepper and tomato sauce.
4. Bring to a boil, then reduce heat.
5. Simmer for 30 minutes.
6. Stir in remaining dill, vinegar, salt and pepper.
7. Discard the bay leaves.
8. Top with cheese.
