Grilled Pork Loin with Sundried Tomato Glaze

Ingredients

1 ea (2lb) Pork Tenderloin, Trimmed
1 tbsp Extra Virgin Olive Oil
Salt and Freshly Ground Black Pepper, To Taste

For the Glaze

1 cup Sundried Tomatoes, Drained and Chopped
1/2 cup Onion, Chopped
1 ea Garlic Clove, Chopped
3 tbsp Rosemary
2 tbsp Honey
Salt and Freshly Ground Black Pepper, To Taste

Method of Preparation

1. Heat the grill to medium.
2. Lightly oil right before grilling.
3. Take the pork tenderloin and coat it with the olive oil, salt and pepper.
4. Place in the refrigerator for 30 minutes.
5. To make the glaze: combine the tomatoes, onion, garlic, rosemary, salt, pepper and honey in a food processor.
6. Process until a paste forms.
7. To grill the pork, cook about 12 to 15 minutes per side.
8. During the last 3 to 4 minutes per side, brush the glaze on.
9. When cooked through, meat will not be pink (internal temperature should read about 160 degrees F in the center).
10. Remove the meat from the grill and allow to rest 10 minutes before slicing.
