Fava Bean Asparagus Succotash

Ingredients
• 2 tbsp Extra Virgin Olive Oil
• 2 lb Fava Beans
• 1ea Red Onion, Diced
• 2 ea Carrot, Diced
• 1 cup Asparagus, Cut into 1/4 in slices
• 3 cups Fresh Corn Kernels, Removed from the Cob
• 1/2 pint Heavy Cream
• 1/4 cup Flat Leaf Parsley, Chopped
• 1/4 cup Maple Syrup
• 1 tbsp Salt
• 1 tsp Cayenne Pepper
Method of Preparation
1. Remove fava beans from pods.
2. Blanch for 30 seconds and shock in ice water.
3. Remove the dull outer skin. Reserve the bright green bean.
4. Blanch carrots for 1 minutes and shock in ice water.
5. Blanch asparagus for 30 seconds and blanch in ice water.
6. Heat olive oil in a large skillet.
7. Add corn and sear for 3 minutes.
8. Add onions and cook for 4 minutes.
9. Add remaining ingredients, except parsley, and cook for 5 minutes.
10. Stir in parsley, serve warm.
