Crostini Black Truffle Butter

Ingredients
Crostini
- 1 Baguette
- Olive Oil
- Kosher Salt
- Black Pepper
Black Truffle Buter
- ½ Ounce Black Truffle, Sliced or Shavings
- 2 each Anchovie Filets
- ¼ Pound Butter, Room Temperature
Method of Preparation
- Preheat the oven to 375
- While the oven is heating, cut the baguette
- I use the tip of my finger to gauge the thickness of the crostini’s. Also use a serrated knife to cut the baguette.
- Place the crostini’s on a baking sheet in a single layer
- At the restaurant we use a spray bottle with oil in it to evenly coat something. If you don’t have a spray bottle, you can brush the oil on the crostini’s. Don’t saturate the bread
- Season the crostini’s with the salt and pepper
- Put the baking sheet into the oven and bake the crostini’s. It should take 8 to 10 minutes. To check, touch the middle of a crostini with your finger. You want to bake these more than you would when you’re making toast
- The crostini’s will hold for several days in an air tight container
While The Crostini’s are baking or in advance of baking them make the Black Truffle Butter
- Make sure to strain of the oil or water that the truffles are stored in
- Put the butter and anchovies in a food processor and pulse until smooth
- With a rubber spatula, scrape out the butter into a mixing bowl
- Take the black truffles and chop up until fine
- Fold and incorporate the truffles into the butter
- Spread on the crostini’s and serve
