Ingredients
- Cooking Spray
- 1 cup plain yogurt
- 2 eggs
- 1/3 cup blended oil
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest
- 1 cup sugar
- 1/4 cup Limoncello
- 2 cups A.P. flour
- 1 & 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- pinch of kosher salt
- 3/4 cups confectioners’ sugar
- 3 tablespoons Limoncello
Method of Preparation
- Preheat oven to 350
- Spray and 8 inch cake pan with cooking spray
- Whisk together yogurt, eggs, oil, lemon juice & zest, sugar and 1/4 cup of Limoncello in a mixing bowl
- Combine in a separate bowl the flour, baking soda, powder and salt
- Pour the dry ingredients into the wet ingredients
- Mix only until ingredients are blended do not over mix or the cake will be come tough
- Pour the batter into the cake pan coated with spray
- Bake the cake in oven for about 30 minutes or until the cake is golden brown and a toothpick into the cakes comes out clean
- Stir the powdered sugar and the 3 tablespoons of Limoncello together in a bowl until smooth
- While the cake is still warm poke holes into the cake with a fork or skewer and spoon the glaze the glaze over the cake and smooth it with the back of the spoon
- Serve warm if possible
