1 tsp plus 1/2 tsp Salt, Divided
1/4 tsp Freshly Ground Black Pepper
5 tbsp Extra Virgin Olive Oil, Divided

1 cup Italian Parsley, Chopped
2 lbs Fresh Mushrooms (1/3 whole, 1/3 halved, 1/3 quartered)

2 ea Roma Tomatoes, Diced

Method of Preparation

1. Combine the water and 1 tsp salt in a medium saucepan and bring to a boil.
2. Slowly add the polenta, whisking until smooth.
3. Reduce the heat to a simmer.
